Serving Information
Serves four to six
Method
Peel potatoes and cut into cubes. Place in cold water and boil until tender. Add 1 tbsp salt in last 5 minutes of cooking
Let cool slightly and press through ricer
In a mixing bowl, combine the potato with the drained fish, parsley, spring onions and salt and pepper to taste
Put a little plain flour on your hands (to prevent sticking) and shape patties into round or oval about 1cm in height
Set up 3 bowls next to each other and coat patties in flour, then beaten eggs and then breadcrumbs
Heat up the oil in a fry pan and shallow fry for about 3 minutes per side until golden brown
Once cooked place on paper towel to absorb excess oil
Tip: If you are going to freeze a few do this once crumbed and before cooking (2nd image below). Be sure to seperate each patty with baking paper before putting into an air tight container in the freezer.
